Creamy spinach and spicy sweet potato

This unbelievably colourful veggie dish is packed with anthocyanins and carotenoids, two powerful plant antioxidants. As we know our skin can't get enough of antioxidants from the inside out and the outside in.
I've cooked the spinach with a mellow sauce. The creaminess of the spinach is offset by the fiery spiciness of the sweet potato.
1. Bunch of red spinach (also works well with green spinach)
2. 1 sweet potato. Slices into thin rectangles.
3. 1 tbsp cream
4. 1 tsbp butter
5. 2 cloves garlic
1. Sprinkle sliced sweet potato with olive oil, cayenne pepper and salt.
2. Bake at 180 degrees until it's completely cooked through approximately half hour. With sweet potato, the more cooked, the better. It just brings out the sweetness.
3. Cut your bunch of red spinach at 3 cm intervals. Wash and rinse thoroughly.
4. Heat up butter in a saucepan.
5. Add garlic.
6. Add spinch
7. Top with cream and cook till just wilted.
8. Season with salt and pepper.
9. Top with your spicy sweet potato
